This Week in Food

#TFW your top pant button pops open.... oops.  BUT it wasn't actually too defeating a feeling to have happen because it means I've found plenty of snacks on this dairy-free, soy free, corn-free diet.

Chipotle is great as a restaurant option for us MSPI moms but I wanted to try my hand at something similar, but different, myself.  Despite not being a vegan, I'm really digging the Oh She Glows website. This DIY Burrito Bowl recipe was the second recipe from her site I've made and "muah!" <----- that was supposed to be the sound of me kissing my lips with fingers like real chefs do.

I joked on my MSPI Lady Facebook page (like it if you haven't!) that I need to get better at food photography but I feel strongly as though in just days my skills improved already ...maybe? (see below)
I cannot imagine there's a bigger fan than me of cilantro out there, so this was taken right before I doused my portion with it until the beans could barely be seen, ha! We also mucked with the vegan-ness of it by adding Applegate Farms Grilled Chicken Strips.  The pre-cooked chicken strips are huge time savers --and really, not that expensive -- plus, available at most grocery stores so you don't have to make a special trip to a more natural store. While I do love to cook, these have become pretty much a staple at our house that we incorporate into at least one dinner or lunch a week.

This week was also week two of feeding purees to baby girl. We did butternut squash last week and tried avocado for a few days early this week and have done sweet potatoes last two nights. Kind of all over the place not really following conventional rules (go figure!) but I found my old "cookbook" by Annabel Karmel from kiddo #1 and plan to make and freeze lots of these recipes for her.  Just start calling me Blair "Betty" Crocker! :)

My MSPI Story

Hi, I'm Blair. I am a working mom to two kids, one toddler boy and one baby girl. Around two months old, my sweet girl started experiencing some symptoms of dairy intolerance (contact me separately if you're just at start of your journey and curious about what specifically made me curious to look into this).  Her pediatrician agreed enough to recommend removing both from my diet. Sigh.  We've since had her blood tested for a few common allergen foods, and thank goodness she has no actual allergy but rather intolerance/sensitivities at this point - to many dairy and soy based foods as well as possibly corn and beef at this point. At first, it was rough to go #dairyfree and #soyfree. Then I found websites like MSPIMAMA (Check.It.Out. No, I don't know her, but wowza is that a lot of great info) and others.  There are recipes galore on Pinterest and everywhere if you just type it in your browser but I kept finding that there was potential for so many more ingredients ...

Glad you're here. I am here to: Save you time Decrease your stress levels Be a resource (and a cheerleader) Breastfeeding, "Mom-ing" and dinner time are each hard enough on their own. Let me help you take something off your plate --by putting something MSPI safe on your plate, without you having to do spend all your time researching recipes and reading labels. I'm not a personal chef, nor dietitian nor doctor, BUT I'm a mom who has been there, and is still there, deep in the weedy, dairy free/soy free trenches. And even a few other food allergens as well. You (probably) have a hair lady, maybe an eyebrow lady, a makeup lady, etc -- let me be your MSPI lady! Side note: Is it just me or is MSPI a total tongue twister sometimes? Maybe that part is just me, but what I think we can all agree is that pre-packaged, pre-portioned and on-the-go snacks are hard to have ready, especially with this new lifestyle and diet restrictions thrown in.
